Danish-founded coffee roasting equipment maker Aillio opened a Latin America headquarters and showroom in San Salvador, El Salvador, in July, appealing to more customers in places where coffee is produced and exported, as well as consumed.

Located in the city’s San Benito design district, the 1,100-square-foot space features four Bullet roasters, a sensory lab and a filter coffee bar equipped with a Weber Workshops EG-1 grinder. Aillio plans to add more third-party equipment as the space evolves. 

“We want to be where our users are — close to coffee origins, farmers, specialty coffee shops and home roasters across the region,” Aillio Head of Sales and Marketing Jacob Juul told Daily Coffee News. “It’s important to us that they have easy access to our machines. El Salvador sits right in the heart of coffee country and has a long and intriguing coffee history.”

The showroom is staffed locally and will provide machine sales, service, education, training and technical support in Spanish, both in person and remotely for customers across Latin America. The equipment company specializes in small-scale electric machines for light commercial use, including small-batch roasting and sample roasting, plus high-end home roasting. 

Led by Aillio LATAM director and native Salvadoran Julio Guevara, the location adds to Aillio’s network of offices in Denmark, Taiwan and Thailand.

“Having worked in this industry for years, I’ve seen how equipment manufacturers usually approach regions like Latin America, often operating at a distance or relying solely on transactional distribution networks,” Guevara told DCN. “What drew me to this project — and what Jonas Lillie, Jacob Lillie, Jacob Juul, and Aillio as a whole represent — is that we are genuinely adventurous.”

Guevara, whose previous work includes positions with the London-based media organization Perfect Daily Grind and Italian espresso machine company Sanremo Coffee Machines, met the Aillio team for the first time in Colombia in 2023 where the two sides “felt an immediate connection,” according to Juul.

Guevara joined Aillio in 2025 and has since led regional events and partnerships in Panama, Guatemala, Ecuador and elsewhere. The San Salvador operation now provides a permanent base for those efforts and future programs.

“Choosing El Salvador as our regional epicenter is deeply special to me as a Salvadoran, but even more so as a coffee professional witnessing the momentum across LATAM,” Guevara said. 

The showroom soft-launched July 27 for customer pickups and tours. Regular walk-in hours are scheduled to begin the week of Aug. 10, followed by a private launch event Aug. 14 for Aillio distributors from across Latin America, local ambassadors, media and diplomatic representatives.
