After the “Deal” ending it’s revealed that Mallorie was pregnant so he probably helped take care of Mallorie and Roman’s child after his passing.

Sometimrs I would like to see Niko again (In GTA VI), but it probably wouldn’t do much for his character as he didn’t seem like he wanted to keep being a criminal regardless of which ending we choose.

He needn't be a criminal to appear in GTA VI, just a stranger we meet. I can't remember if Niko was wealthy at the end of the story, makes sense for me that he left Liberty City and retired elsewhere. By now Roman's child were nearly 18, they all could have left the city after what happened. Could imagine to become him a fisher or a skipper, maybe even run a business together with Roman's child.

PS: In my head canon Niko left the city in both endings for a calmer place in the US or went home to Europe.
