Social media sensation Sivan Kobi, the beloved creator behind “Sivan’s Kitchen,” invites California Live’s Jessica Vilchis into her home for the ultimate Latkes 101 masterclass. With help from her mom Yafa, Sivan shares the family secrets behind perfectly crisp-on-the-outside, fluffy-on-the-inside latkes that are the star of any Hanukkah table.
SIVAN’S FAMILY LATKES
Yields: About 30 latkes
INGREDIENTS:
4 large golden potatoes
1 white onion
3 large eggs
3 tbsp self-rising flour
2 tsp salt
1 tsp black pepper
Neutral oil for frying
Sour cream & apple sauce for serving
HOW TO MAKE:
Peel the potatoes and onions. Cut them into smaller pieces to fit into your food processor chute (or prepare to grate by hand).
Use a food processor or hand grater to shred the onions. Make sure to strain out all the excess water from the onions and place them in a large bowl.
Grate the potatoes and add them directly to the bowl with the onions. Do not strain the potatoes—the starchy water helps keep the latkes fluffy.
Add the eggs, self-rising flour (or substitute), salt, and pepper to the bowl. Mix everything together until well combined.
In a large pan, heat neutral oil over medium-high heat until shimmering.
Using a spoon, scoop the batter into the hot oil and gently flatten it out. Fry until golden brown on one side, then flip and cook the other side (about 4-5 minutes per side).
Remove the latkes from the pan and place them on a paper towel-lined plate to absorb excess oil.
Plate the latkes and serve with sour cream or your favorite dipping sauce. Don’t forget to enjoy them hot and fresh!
