One of the most common cultivated varieties of New Mexico green chile, the “Big Jim“, was developed by the son of Japanese immigrants, Dr. Roy Nakayama.
Roy Nakayama, a Japanese-American whose pioneering work in agriculture and horticulture at NMSU helped lay the foundation for chile to become a major industry in our state.
In 1975, Dr. Nakayama developed the New Mexico “Big Jim”, considered the world’s largest green chile pod, perfect for a chile relleno.
Throughout his tenure, Dr. Nakayama developed numerous chile and pecan varieties, which continue to generate over $10M of income annually in NM.
