If there's one thing that is likely to cause crossed words in the kitchen of many homes, it's where certain foods live. Now an expert has given her definitive view on the issue
Should eggs be stored in the fridge or out? How about ketchup or bread? If you and your other half disagree on just where to keep those, and other kitchen staples, then you’re not alone. A survey found two thirds of us have argued with a partner or family member over whether certain foods should live in the fridge or the cupboard, sharing crossed words over the issue an average of twice a month in the past year.
It’s not surprising given that more than three quarters admit they are unsure where at least some foods should be stored for the best taste and freshness. For many, the answer goes back to what our parents did, although four in 10 now look online for advice on the issue.
According to the poll by biscuit maker Bahlsen, bananas (21%), potatoes (21%) and avocados (17%) all leave Brits scratching their heads, along with bread (17%), jam (15%), and honey (12%).
Food waste expert Kate Hall says many people are storing dozens of everyday ingredients incorrectly, particularly during hot weather. “Food storage isn’t as straightforward as many people think," she explains. "We often make decisions based on habit or what our parents did, but factors such as temperature, humidity and exposure to light all affect quality. Some foods that people instinctively leave in the cupboard actually benefit from refrigeration, while others lose flavour, texture or quality if they’re kept too cold.”
Among the items she says should be kept in the fridge are apples, as keeping them in the crisper drawer slows the natural ageing process and helps them stay crisp and fresh for much longer. Keeping potatoes in the fridge can help them last up to three times longer, according to Kate.
Jams and marmalade should be in the fridge once opened, she says, as mould and yeast can grow, particularly if crumbs or butter contaminate the contents. And sauces and condiments? Kate says: “Although many condiments are acidic or high in sugar or salt, many brands will still recommend refrigerating after opening as it helps to preserve their flavour, colour and quality for longer.”
Eggs, she says, can be kept at room temperature in the UK. They will stay fresher for longer if kept at a consistent temperature below 20°C but can go in the fridge if above that. “You should also keep eggs in the original packaging to stop them absorbing smells from other foods in the fridge,” Kate adds. The fridge no-gos include tomatoes, as refrigeration can dull the taste and leave them with a mealy texture. While chocolate biscuits, with their thin coating, can be chilled, Kate says storing bars in the fridge can leave them with a whitish bloom on the surface.
Olive oil should be stored in a cool, dark cupboard away from your hob, she adds, and storing honey in the fridge can encourage it to crystallise much faster, making it thick and grainy and more difficult to use. Keeping coffee (ground or beans) in the fridge exposes it to moisture and odours, both of which can dull its flavour and aroma over time. Other fridge food faux pas from Kate include whole onions, garlic, and avocados (until ripe).
When it comes to bananas, Kate says they are best left at room temperature so that they can ripen naturally.
